Cucumber salad with red fruit vinaigrette


  • 8 mini cucumbers or a normal cucumber, deseeded.
  • Vinaigrette: 80g red fruit, 3 tablespoons apple cider vinegar, 9 cl of olive oil, a pinch of salt and a pinch of sugar, pepper to taste.
  • Extra fruit and bean sprouts for presentation.


Wash and chop the finely diced cucumbers (if the cucumbers are large, peel them and remove the seeds).

Dry the cucumbers with kitchen paper and sprinkle with a little salt.

Place the cucumbers on the plate next to the red and sprouted fruits.

Vinaigrette; crush the red fruits and pour into a jar along with the apple cider vinegar,
olive oil, salt, sugar and pepper, stir everything well and pour over the salad.
